Back to school season is not over until soccer season kicks off. During this hectic period, it is very important for me to maintain a strong connection with my kids, every chance we get. My day begins with waking up early and preparing their breakfast. Prior to breakfast, I help them get ready for school. We then sit together at the breakfast table with our favorite bowl of cereal, cracking morning jokes to liven the mood to have great school day. However, our day does not end at the breakfast table, not by a long shot, it’s just beginning. Later in the early afternoon, once having picked up my daughter and my youngest son, while waiting for my eldest to be let out, we sit in the car, enjoying an afternoon snack while we discuss how their school day was. At the point the homework is completed, we head out to soccer practice.
No-bake Granola Cereal Bars

While spending time with my kids is essential for me, and I learned a long time a go, whether we are five minutes or five hours away from home, snacks should always be packed. Before leaving my runs to pick up the kids from school, I take a quick glance at the portable lunch cooler, and fill it with snack items. When heading to soccer games or going on vacation, my job is to pack as many snacks and drinks as the possible in the full size diaper book bag. Since we are a huge cereal family, my wife and I have developed our little snack menu that we know our kids will eat and enjoy. Today, I will share with you one our vary favorite on the go snacks: no-bake granola cereal bars.
To make this easy and yummy, no-bake granola cereals bars, all you need is unsalted butter, brown sugar, honey, Kellogg’s Rice Krispies, granola and chocolate chips.
To get started, using a medium saucepan, combine 1/2 a cup of packed brown sugar, a 1/4 of a cup of honey and 4 tablespoons of unsalted butter. Bring the mixture to a boil over medium-high heat, lower heat to medium-low and simmer until the sugar dissolves, approximately 2 minutes. Remove the pan from heat.
After removing pan from heat, immediately add 2 cups of granola, 1 cup of Kellogg’s Rice Krispies to saucepan, fold the ingredients to evenly coat them with the sauce.
Transfer the granola cereal mixture to a parchment paper lined 9×13″ baking pan while pressing firmly to evenly fill.
Gently press the chocolate chips onto the top of the granola. Let the granola mixture set in the refrigerator until firm, approximately 15 minutes.
Cut your bars to size. My preferred size are triangle 3×3″ or 2×2″ squares shaped bars.
